Recipe: New Twist on an Old Favorite…Mexican Pigs-In-A-Blanket


I have these in the oven right now and have made these since I was in high school.  This version of the standard pigs-in-a-blanket recipe is quicker and the tortilla provides a great crunch. Kids love these things.

So, if you need a quick snack recipe for a crowd or lunch idea…try these.

Mexican Pigs-In-A-Blanket

A package of hot dogs
One 6-inch flour tortilla for each hot dog
Mexican mix shredded cheese

Preheat oven to 350 degrees

Spray a cookie sheet with oil.

Put about 1/4 cup of cheese on top of the tortilla.  Evenly spread out cheese. Put hot dog on top of cheese.  Roll up hot dog in the tortilla like a jelly roll.  Secure with toothpick.  Put seam side down on a cookie sheet. Repeat until all  of the hot dogs have been used.

Bake for 20 minutes or until tortillas are slightly browned.  Remove from oven.  Dip in ketchup or mustard or your favorite dip.

If you want to use as an appetizer.  Slice into 1-inch sections.
