Recipe: A Holiday Favorite — Mound Bars

In addition to making lots of Christmas cookies, my family also has a number of favorite bar recipes that I produce during the holiday season.  One of the favorites is Mound bars.  These coconut filled bars taste like the candy bar and with a few green and red sprinkles on top of the chocolate make a nice festive addition to any cookie tray.

Mound Bars


2 cups of graham cracker crumbs
1/2 cup melted butter
1/4 cup granulated sugar
Combine graham cracker crumbs, butter and sugar. Press into the bottom of a 9X13 pan and bake at 350 degrees for 5-8 minutes.

4 cups of coconut
2 cans of sweetened condensed milk
1 teaspoon almond extract
Combine coconut, condensed milk and almond flavoring and spread over warm baked crust. Bake for another 25 minutes, until set and just starting to brown.

1- 12 ounce package of chocolate chips
Sprinkle chocolate chips over hot bars, return to oven to melt chocolate chips.  This takes just a minute or two.  Remove from oven and spread the chocolate evenly over the bars.  Decorate with holiday sprinkles.

Cool and cut into bars.
